Tuscan Chicken Simmer

Okay, take a minute to look at this recipe. Six ingredients, three directions... are there any questions? Is it good? OHHHHH YES!!!! And this is coming from the girl that doesn't like tomatoes.... This recipe was so easy and delicious. We especially loved the sauce. We will be repeating this in our house!

I made a few minor changes to our dish. After cooking the tomatoes I took a fork and popped each of them. I then flattened them out and stirred them around. This gave the sauce a distinct red tint and tomato flavor while the tomato skins became more like sun-dried tomatoes. My mom made this dish as well and absolutely loved how the tomatoes popped when she put a bite into her mouth. Whatever your preference may be you can't really go wrong.

I also cooked the chicken as indicated but then I cut it into bit sized pieces for better distribution.

Skillet Parmesan Zucchini

In case you haven't noticed, I have developed a serious love for meatless meals. That doesn't mean that I won't still cook with meat on occasion but I have enjoyed the large number of meatless recipes that have come my way lately. This is another one that didn't disappoint. It came together so quickly and was very tasty. Now you may think that this is just a glorified spaghetti sauce, and maybe it is. But don't fret! Just serve it over your favorite noodles. Personally we liked this just fine all by itself, but to each their own!

Zucchini Marinara Subs

We LOVED these! They were so delicious and filling. They are quite messy but since this is the meatless, healthy version of a meatball sub.... what did you really expect?

One of my favorite parts of this recipe was how "moist" the zucchini got after cooking it up in my skillet. It was the perfect crisp-tender. I even left the mushrooms in there and didn't mind it one bit!

Once again I must say that the Wal-mart bakery is the best place to get bread products. They have fabulous sub rolls there that made these even more heavenly.

I made my own marinara sauce from scratch to use with this recipe. I want to post about the sauce but I want to get a picture of it first. I will be sure to do that soon!

Thanks a million to Real Mom Kitchen for this fantastic recipe and picture found at this site here: http://realmomkitchen.com/2847/zucchini-marinara-subs/

Zucchini Marinara Subs
From Real Mom Kitchen

  • 1 tablespoon olive oil
  • 2 medium zucchini, diced (cut lengthwise into fourths and the diced into 1/2 inch chunks)
  • 2 mushroom, sliced
  • 1 clove of garlic, minced
  • salt and pepper to taste
  • 3/4 – 1 cup marinara sauce (depending on how saucy you want it)
  • 4 slices provolone cheese
  • 4 (6 inch) crusty French or Italian sandwich rolls, split

  1. In a skillet over medium heat, fry the zucchini and mushrooms in olive oil until browned and tender. Season with salt and pepper.
  2. Add garlic to mixture and sauté for 1 min. Stir in the marinara sauce and cook until sauce is heated.
  3. Place a slice of cheese on each roll and broil in oven until cheese is melted. (Leave rack in the center of the oven, don’t move it up and you won’t burn the roll. That is as long as you keep your eye on it.)
  4. Divide zucchini mixture evenly between the four rolls and enjoy.

Skillet Chicken Nachos

Who likes doing dishes? Not me! That is one of the biggest reasons that one skillet meals are so wonderful. All the ingredients in only one pan. Excellent. This dish came together so fast and was delciously flavorful. The only thing I could have wished for was that I had some of the homemade salsa I made yesterday when we made these nachos. (I am behind on blogging.... stay tuned!)

Skillet Chicken Parmesan

WOW! This was a fantastic dish! I seriously wish I had room for another helping but it is also very filling. This ONE skillet meal came together quickly and easily and we just ate it up. The rich marinara sauce made from SCRATCH combines with heavenly melted cheeses and tender, juicy chicken to make a dish that will grace our table again and again. This recipe is courtesy of Mel's Kitchen Cafe and while she says that it is nothing fancy, it is easily as beautiful and tasty as the meal my hubby and I had at Carino's Italian restaurant last night! And the best part? No $30 price tag for this one!

I mentioned on my last post that my favorite place to get pre-baked bread is from Wal-mart. Do you know the baskets of fresh baked french bread that they have by the check-out stands for $1 each? Well if you go back to the bakery section itself they have various "flavors." I bought a $0.98 loaf of parmesan garlic french bread to pair with this meal. I cut it in half, brushed it with butter, sprinkled it with a little fresh grated parmesan and broiled it in the oven for 2-3 minutes just until it was golden brown. My husband loved it so much he said it was like eating candy!

Let's talk for just a minute about parmesan. Now, if you are like me, you have a big bottle of grated parmesan above your oven that you have used in all dishes that call for parmesan since the beginning of time. My mother, once again, showed me the error of my ways. She buys fresh parmesan pre-"grated"/shredded and then measures out 1 cup into sandwich baggies to freeze for later use. After tasting the difference between her parmesan dishes and mine I decided that I had to try it out - and I will NEVER go back. The fresh parmesan makes such a huge difference in the flavor of the dish. And the price tag really isn't that different. I can get a big bag of parmesan at Sam's Club for about $9. It comes out to be 6+ cups. And how often are you going to use an entire cup for one recipe? I keep one baggie in the refrigerator and the rest in the freezer. When one bag runs out you just stick the next bag in the fridge!

This recipe makes 6 hearty portions so invite some friends over and prepare to WOW them. Or, be selfish like us and hoard it all to eat for leftovers the next day. :-)

Skillet Chicken Parmesan
from melskitchencafe.com

*Note: I use really thick boneless, skinless chicken breasts to make thinner cutlets (by cutting in half lengthwise) but if you don't have or can't find thick chicken breasts, use thinner chicken breasts, keeping an eye on cooking time to make sure they cook all the way through.

*Serves 6

2 cloves garlic, finely minced
28-ounce can crushed tomatoes
14.5-ounce can diced tomatoes, drained
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 cup freshly grated Parmesan cheese, divided
3 boneless, skinless chicken breasts, cut in half lengthwise to make 6 thinner chicken cutlets
Salt and pepper
1/2 cup all-purpose flour
2 tablespoons canola oil
3/4 cup shredded mozzarella cheese
3/4 cup shredded provolone or sharp provolone cheese (I didn't have this on hand and didn't want to buy it so I just used double the mozzarella)
Hot spaghetti noodles for serving

In a medium bowl, combine the garlic, crushed tomatoes, diced tomatoes, oregano, basil, sugar, salt, pepper and 1/4 cup Parmesan cheese. Set aside.

In a large 12-inch skillet, heat the canola oil over medium heat until rippling and hot. Thoroughly dry the chicken pieces and season with salt and pepper on both sides. Place the flour in a shallow dish and dredge the seasoned chicken pieces in the flour, coating both sides. Gently place 3-4 of the chicken pieces in the hot oil and cook for 3 minutes and then flip and cook 3 minutes longer until a nice golden crust has formed on the chicken (they'll continue to cook in a later step). Remove the chicken to a plate and continue with the remaining pieces, removing them to the plate when they have been browned.

Wipe the skillet of excess oil and pour the sauce contents in the bowl into the skillet, taking care of splatters if the skillet is still piping hot. Turn the heat to medium and gently nestle the pieces of browned chicken into the sauce, making room for all six chicken breast cutlets. The chicken should be mostly covered with the sauce. Cover the skillet and simmer the sauce and chicken on medium or medium low for 15 minutes, checking every few minutes to make sure the chicken isn't sticking to the bottom of the skillet. If so, turn the heat down a bit.

Uncover the skillet, sprinkle the mozzarella, provolone and remaining Parmesan cheese over the chicken and sauce. Cover and cook for five more minutes, or until cheese is nicely melted.

Serve over hot spaghetti noodles, if desired.

Barbecue Beef and Corn Sheperd's Pie

I am a big Sheperd's Pie fan and so when I came across this recipe I knew I had to try it. What a fun twist on a classic recipe! This was tangy and a bit spicy and BURSTING with flavor. Now, I had started to make dinner by the time I realized I had the wrong kind of package of mashed potatoes. I only had a 4 oz. package of instant potatoes. So... we improvised! I didn't use the milk, water or butter and just made up the instant potatoes in the microwave. I still mixed them with the corn and onions and spread it over my beef mixture. It was still REALLY good. I also just served this with corn tortilla chips and we ate this like a dip. Super yummy and super easy!

The picture and recipe are courtesy of BettyCrocker.com and can be found here.

2 tablespoons butter or margarine

Ham N Egg (Potato) Skillet

Sorry I have been MIA for a while! I had kidney stones last week and definitely was not up to cooking. I return with a wonderful new recipe that we had for dinner all by itself without any other side dishes. I loved how predominate the potato was in this recipe and I definitely think that it should be called Ham N Potato Skillet. The egg is not a predominate part of this meal. Lots of users on Allrecipes.com (where I got this recipe) said that they increased the amount of egg and decreased the amount of potatoes. I did not do this and it suited my taste buds perfectly - but do what you wish! Also, I doubled the recipe all around except for the cheese. I thought 2 cups of grated cheese would be overkill and so I only put in 1 cup. If you want the dish to be especially cheesy, go ahead and use the amount called for. The recipe and picture are courtesy of Allrecipes.com and can be found here.

HAM N EGG (Potato) SKILLET

From Allrecipes.com

• 3 medium potatoes, peeled and diced
• 1 tablespoon butter or margarine
• 1/4 cup chopped onion
• 1/4 cup chopped green pepper
• 1 cup cubed fully cooked ham
• 3 eggs, beaten
• 1 cup shredded Cheddar cheese (I used half this amount)
• salt (I used seasoning salt) and pepper to taste

1. In a skillet, saute potatoes in butter until tender and golden brown. Add the onion and green pepper; saute until crisp-tender. Add ham, eggs, cheese, salt and pepper. Cook until eggs are completely set, stirring occasionally.
